It’s raspberry season! It’s also ridiculously hot. We’ve been getting temperatures around 40 (104f) with the humidex for the past week, so cold drinks are definitely in order. Combine that with some freshly picked raspberries from Fruition berry farm, and you get this drink. It’s slightly sweet but the lime gives it a nice ‘zing’.

Adapted from Annie’s Eats

Ingredients:

1 cup water
1 cup granulated sugar
1 cup lime juice (freshly squeezed or bottled)
1/2 cup raspberry puree, strained
5 cups cold water
Additional raspberries for serving

Note: Raspberry puree can be made either in a food processor or simply by squishing raspberries with the back of a spoon and then putting them through a strainer.

Heat water and sugar in small pot over medium heat until sugar is completely dissolved (the syrup should appear clear).

Combine lime juice, raspberry puree, and 2 cups of water in a large pitcher. Add the water and sugar mixture and stir. Add remaining 3 cups of water to taste. Refrigerate until cold and keep cool until serving.

Add a few raspberries just before serving (they will float on top of the drink).

Enjoy- and stay cool!
